John Ronald's Dragons was published in 2017. It is illustrated by the wonderful Eliza Wheeler. I was inspired to write the book after reading Tolkien's essay, "On Faerie Stories," which contains the above quote about dragons. While John Ronald's Dragons is non-fiction, it celebrates the power and wonder of fictional worlds and the child's imagination.
